TLDR Heat diffuser plate in place resulted in a huge difference in temp from left to right side. To be clear, this is the heat diffuser plate: Seems to be a great way to even things out. The temps are always within 3° of each other. I did do the normal start up procedure, but did not run the exact same test because I had to cook dinner, but you can see that the temps are way closer left to right side. The next night I removed the heat diffuser plate and placed thermometers in the exact same place.
